Buttermere Plays on Sweet Manliness this Father's Day

Father’s Day is not an occasion often associated with cake, but Jamie Tung, owner and head baker at Buttermere Patisserie, feels that exploring unconventional practices and norms are part of the joy in life and likewise, in baking and pastry. Jamie believes that cake creation means more than introducing enticing art pieces of alluring tastes and flavour profiles; a remarkable cake and its accompanying experience is one that conveys a story or relates to a feeling or memory. For Father’s Day this year, Jamie has taken inspiration from her own father not only by channeling his bold courage and quiet confidence, but also by dedicating the flavours to some of his daily staples and favourites including coffee, banana, and lemongrass. 
 
Buttermere has created two 6-inch cakes epitomizing the essence of the fatherly figure: the Gentleman and Tuxedo. A crunchy light brownie pâte sablée paired with a caramelized lemongrass banana layer and milk chocolate mousse, the Gentleman is accented by an edible model of a mustache man in a top hat – a thoughtful and direct contrast of the standard, old-age Victorian man to current societal norms of masculinity. The Tuxedo is a symbol of confidence and classiness, exemplified by the timeless tuxedo silhouette and bow tie made of coffee sponge cake with a rice krispy crunch base, notes of citrus cremeux, and a mocha mousse. Meanwhile, Buttermere Café is thrilled to announce that, as of today, they will be opening their doors for dine-in service again. To celebrate the reopening, Buttermere is introducing a refreshed petit fours menu incorporating new flavours for the summer season. The new line up includes a mini version of the Gentleman called the Banana CocoaIris, a black tea sponge cake with berry mousse and London Fog ganache; St. Honoré, a lemon, caramel, and coffee layered puff pastry with a millefeuille base; and Fascinator, a matcha sweet tart with raspberry cremeux, and bergamot curd.
