White Forest

A modern interpretation of the classic Black Forest, reimagined in white while preserving the flavours that made it timeless. 

Instead of heavy chocolate cream, we’ve layered silky tonka bean namelaka and dark chocolate ganache with vibrant, juicy, sun-ripened cherries from British Columbia’s cherry compote and BC cherry crémeux. The flourless chocolate sponge keeps the cake rich and moist, while dark chocolate shavings add just the right amount of bitterness and texture.
