Named after the historic name for Taiwan, Formosa is a cake inspired by my hometown, Kaohsiung, a southern city known for its tropical fruits and tea culture. This dessert brings together the comforting depth of roasted Taiwanese oolong tea with two fruits deeply connected to southern Taiwan: fragrant lychee and sweet pineapple.

The roasted oolong carries warm roasted, nutty notes with a gentle floral finish, balanced by the brightness of pineapple and the delicate sweetness of lychee.
